Pol Sambola or Coconut Sambol

Also known as the coconut Sambola, the Pol Sambola is a spicy yet savory side dish which is eaten alongside curries, rice and Appa. The coconuts are first grinded finely and then mixed in a mortar and pestle alongside dried red chilies, Maldives fish chips, onions and salt. The coconut is mashed with the rest of the ingredients till the color of the dish becomes light orange. The dish is then served in a bowl and sprinkled with a hint of lime juice. The dish can be served with almost any Sri Lankan dish especially with hoppers and string hoppers. It also makes up as a wonderful dip for potato chips.
